This is one of those classic home-style dishes that feels elegant but deeply comforting at the same time. Tender artichoke bottoms are filled with seasoned meat, then gently simmered with peas and carrots in a light lemon sauce that’s smooth, bright, and perfect spooned over rice.
It’s the kind of meal many of us grew up seeing at family tables—simple ingredients transformed into something special. The richness of the meat, the softness of the vegetables, and the freshness of the lemon create a balanced dish that feels hearty without being heavy.
Served with warm rice, it becomes the kind of comforting meal people always remember.
