Cover the bowl and let it rest for 30 minutes.
With wet hands, gently lift and fold the dough over itself 3–4 times around the bowl.
Let rest 30 minutes. Repeat this step 2 more times every 30 minutes.

Dust your counter heavily with flour.
Turn dough out gently and divide into 8 rectangles.
Handle carefully to keep the air bubbles inside.
