These easy berry yogurt breakfast cups are made with creamy Greek yogurt, homemade berry chia jam, and crunchy granola for a fresh, healthy, and delicious breakfast.
Add the berries, honey or maple syrup and vanilla to a small saucepan.
Cook over medium-low heat for 5–7 minutes, stirring occasionally, until the berries soften and release their juices. Lightly mash the berries while leaving some pieces whole.
Remove from the heat. Reserve around 1/4 cup from the berries (it will be added to the yogurt).
Add chia seeds, stir well and let it cool completely.
In a bowl, mix the Greek yogurt with the reserved berry sauce.
Spoon a layer of yogurt into the bottom of each jar. Add a layer of cooled berry chia jam, followed by granola. Repeat the layers until the cups are full, finishing with fresh berries and granola.
Serve immediately. You refrigerate for up to 2 days. Add the granola just before serving if you want it to stay crunchy
