Preheat the oven to 200°C . Toss the potatoes with olive oil, salt, pepper and oregano
Spread them in a baking dish and roast for 20 minutes.
Pat the fish dry and score both sides with 3–4 shallow cuts.
Sprinkle salt and black pepper all over the fish, making sure to get it inside the cavity and into the scored cuts.
Place a few lemon slices and fresh herbs inside the fish.
Remove the potatoes from the oven and place the fish on top.
Bake for 25–30 minutes, depending on the size of the fish, until it flakes easily with a fork.
In a small bowl or jar, combine the lemon juice, olive oil, grated garlic, Dijon mustard, dried oregano, salt, and black pepper.
Close the jar and shake vigorously until the sauce is smooth and emulsified.
Serve fish with potatoes, side salad if desired and drizzle with sauce.
