Fresh homemade pita bread is one of those things that instantly makes any meal better. Warm, soft, and perfectly puffed, it’s simple but incredibly satisfying straight from the pan or oven.
Watching the pita balloon and create its signature pocket never gets old. And once you make it at home, the texture and flavor are completely different from store-bought versions—softer, fresher, and chewier.
It’s a staple in so many Middle Eastern homes because it works with everything: dips, sandwiches, shawarma, breakfast spreads, or simply dipped in olive oil and zaatar.

In a bowl, mix flour, yeast, sugar, and salt.
Add warm water. Mix until a dough forms.
Knead for about 10 minutes until smooth and soft.
Cover and let rise for 1 hour or until doubled in size
Divide dough into 8 equal pieces. Shape into balls.
Cover and let rest for 30 minutes.
Roll each ball into a circle about 1/2 cm thick.
Cover and let rise for another 15 or 30 minutes.
Cook on a very hot pan filling the dough each 10 seconds until puffed and golden spots appear.
Alternatively, you can bake the pita in the oven. Preheat oven and tray to 250°C.
Place pita on hot tray and bake for 2–3 minutes until puffed.
Wrap cooked pita immediately in a clean towel to trap steam and keep them soft.
