Heat olive oil in a pan.
Sauté onion and bell pepper until soft.
Add chicken and spices, mix well, and cook for a few minutes.
Place a tortilla in a pan.
Add on one side cheese, chicken filling, then more cheese.
Fold in half
Cook on medium heat for 2–3 minutes per side until golden and crispy and cheese is melted.
Cut into wedges and serve warm.
