Prepare the spinach
In a skillet over medium heat, add some olive oil. Stir in the spinach and cook for 2–3 minutes to remove any remaining moisture. Add crushed garlic, cook until fragrant and set aside.

Make the cheese mixture
In a large bowl, combine the cream cheese, sour cream, heavy cream, ¾ cup mozzarella, some of the cheddar cheese, salt and black pepper. Fold in the spinach mixture until well combined.

Transfer the mixture to a small baking dish or skillet and sprinkle the remaining mozzarella over the top.
