These fresh veggie summer rolls are one of my favorite meals when I want something light, colorful, and packed with fresh ingredients. Every bite is filled with crisp vegetables, creamy avocado, fresh herbs, and soft rice paper, making them as satisfying as they are refreshing.
They’re completely customizable, so you can use whatever vegetables you have on hand, and they’re perfect for warm weather when you don’t want to spend much time cooking. Paired with a creamy peanut dipping sauce, they become a simple meal or appetizer that’s full of flavor and texture.
