Instructions

  1. Make the meatballs:

    • In a bowl, mix ground chicken, garlic, egg, breadcrumbs, dill, lemon zest, parsley, chili flakes, salt, and pepper.
    • Form into small meatballs (makes around 16) and place on a lined baking tray.
    • Refrigerate while preparing the rest of the recipe.
    • Heat a large pan on high, drizzle with olive oil. Cook meatballs on each side until browned.
    • Turn down the temperature, cover the pan and let cook through for 10 minutes.
    • Alternatively, you can brush the meatballs with olive oil and bake for 18–22 minutes until golden.
  1. Make the Tzatziki:

    Mix Greek yogurt, grated cucumber (squeezed dry), garlic, olive oil, lemon juice, dill, mint and salt. Chill until ready to serve.
  1. Prepare the greek salad:

    Combine tomatoes, cucumber, red onion, olives, and feta. Drizzle with olive oil and vinegar. Season with salt, pepper, and oregano.
  1. Assemble the bowls:

    Add cooked plain basmati rice to each bowl.
    Top with chicken meatballs, Greek salad, and a generous spoonful of tzatziki.
    Finish with extra olive oil or fresh herbs if desired.
